Tofu Burgers!!

Easy, Easy, Easy!!!

1/2 package of extra firm tofu, drained and cut into four 1/4 slices. (Burger size!)

Bread Crumbs- choose extra fine ones, add some nutritional yeast and a little pepper

Spinach

1. Bread your four slices of tofu

2. Fry both sides until crispy and browned

3.While on the last side add some cheese, let melt

4. Slap on a bun, top with fresh spinach and enjoy!

Tofu Scramble with Cheese and Bacon!

1 package of Tofu, firm or extra firm, drained.

1c. cheddar cheese (I'm always heavy on my cheese so feel free to use as much as you want or don't want to!)

1 package of tempeh bacon. I like the pre-smoked ones best.

Just a pinch of salt and pepper

Other fun items you can add... scallion, mushrooms, spinach, broccoli, kale

1. Toss your tofu into a frying pan that already had hot oil going. Set it at med-hot. Crumble your block and let it get brown on all sides

2.Add your tempeh, cook for about 2 minutes

3.Add your cheese, none of them take very long to melt.

You can add whatever else you want when you add your tempeh.

Vanilla Cake With Peanut Butter Icing

For the Cake!




1 1/2c. flour


2 tsp baking powder


1/4 tsp salt


3/4c dry sweetener


3/4c. soy milk


2tsp vanilla extract


1/4c. oil


Egg replacer equal to one egg (I used 1/2 banana)


Mix all the ingredients in a large mixing bowl, until “just mixed”. Light and fluffy! The original recispe called for 25-30 minutes at 350. I did it for 25 minutes at 325 in a dark pan and it was perfectly timed. Check it with a knife!




The Icing…


3tbsp butter


1/2c sugar


1/3c. peanut butter


2tbsp soy milk


I added about 2tbsp of confectioners sugar to thicken my icing up.


Mix all together


When your cake has cooled go ahead and add your icing. Make sure you don’t top it while it is hot or your icing will just run off!


The original recispes are from How It All Vegan with a few alterations. Spice it up however you want!

Tofurky Madness

So this one is quite easy though a bit time consuming!




For the vegetables you can choose whatever you would like, in this photo I have chosen:


2 red potatoes, washed and cubed


2 large yukon gold potatoes, washed and cubed


1 handful asparagus


2 large carrots. washed and cut into bite size pieces


Fresh broccoli – however much you would like


I have steamed the broccoli and aspargus lightly first.


In this recipe I used a garden herb variety of stuffing and mixed in the vegetables with it.


1/2 cup vegetable broth – I like a low sodium option


Prepare the tofurky according to the box


I added…


1tsp sage


1tsp oregano


1tsp all spice to this whole recipe


1tbsp soy sauce (I like “BRAGGS” brand)


1/4 cup butter melted and covered over the tofurky, add a little rosemary over the top for a little extra if you would like!


Cook all of this in a baking pan covered in foil for and hour, use the guidelines on the tofurky box to help make your adjustments.


Take it out and add a little more butter or seasoning if you need


Cook for another 15-20 minutes or until done!

Cinnamon & Fruit Pancakes

I am noticing now that these photos really don’t look great but the pancakes were awesome!




These pancakes came out of a box (thank you local store brand)


Just add 1/2 banana roughly for 1 egg, I usually like to add an entire banana for flour and consistency. That’s just me.


Mix, add some cinnamon or nutmeg, I use vanilla soy milk instead of original. Again, whatever you enjoy. Pour pancake batter.


Before you flip to the second side add your fruit! I used strawberries and peaches in mine. Flip your pancake!


Cook for another minute or so, put on your plate, add butter, peanut butter, jelly, cream cheese, maple syrup or anything else delicious and great!

Tofu Breakfast Sandwich (awesome!)

I’m terribly upset that I didn’t take any photos of this, It was my first time cooking it and I didn’t want any evidence if it came out too awful! It came out great though.. obviously with the title… anyhow here we go!



This makes about 4 sandwiches

1 package firm/extra firm tofu. drained and cut into thin 4 slices. (It’s going on a sandwich!)

Cheese- I used a handful of diaya chedder but I think Tofutti slices would be great too.

8 slices Bacon – I used maple tempeh

2 hashbrowns- I used a pre-packaged one for my first attempt.

8 slices of Italian bread- toasted

Fry the tofu in maple syrup over medium-high heat while you have the hashbrowns cooking in the oven. 450F for about 15 minutes.


Add your cheese to the hashbrowns, then the tofu slices and top with the bacon

Put back in the oven for another 10 minutes

Remove- put on your bread and eat the heck out of that!

Baked Vegan Mac n’ Cheese

I figured I would kick-start this with one of my all time favorite recipes. Quick, easy and let’s be honest who doesn’t love home-made mac n’ cheese?


1 box of noodles (any that you fancy)


2 bags of vegan cheese (if available in your area I highly recommend “Diaya” cheese) I use 1 bag of mozzarella and 1 bag of cheddar.


1/4 cup of Veganaise


1/4 cup original soy milk or 1/4 cup vegan butter(I like silk brand milk and earth balance for butter)


About 1 cup bread crumbs to cover the top of your mac n’ cheese


For some extra fun you can mix in some vegan-style bacon, I use tempeh.

Boil your noodles until done, drain, pour into a large mixing bowl


Mix in milk/butter and veganaise


Mix in your cheese and anything else you want to cook in (sometimes I sneak some broccoli or Gardein brand chicken fillets into my meal before I bake it)


Go ahead and mix it all together and pour it into a standard size baking pan


Cover the top layer with bread crumbs


Cover pan with a layer of foil


Bake at 350 for about 25 minutes. This will vary depending on your oven of course so feel free to take out your pan and check on it.
